Brewed in conjunction with Josh Halfbright from Flat 12 Bierworks, this hoppy saison is brewed with a generous addition of Spelt, a hexaploid of wheat.  It was a European staple in the Bronze Age.  A generous addition of Pacific Jade and Nelson Sauvin hops pair very well with the wild, fruity, farmhouse notes brought out by the French Farmhouse Saison yeast strain.  A high attenuation along with plenty of simple sugars yield a dry, mildly tart, fruity, earthy, hoppy, complex beer.  We then finished this portion of “We Spelt It Wrong” in rinsed oak barrels inoculated with the wild yeast brettanomyces to dry it even further and add to the wild, farmhouse flavors.   Drink it up!
