For the most part a double strength Belgian IPA aged with toasted American oak. We took the Knotty Squirrel recipe and added more malt, more hops and more flavor then crammed it full of wood and let it age for a month. This ale still has a base of pale ale, aromatic, and caramel malts, upon which is set an American hop triumvirate of Columbus, Centennial, and Cascade. The addition of Belgian Abbey ale yeast provides a spicy, earthy, breadlike character that is truly unique. Lemon and grapefruit zest enhance the citrusy and piney American hop character and the oak drys the beer out and adds aromatic qualities.
