Local Option KY Common

Kentucky Common Beer is a once-popular style of ale brewed in and around Louisville, Kentucky. The style is rarely brewed commercially today, so that is why the Local Option Bierwerker dropped in to brew up a batch here at Against the Grain. The grist bill includes Munich, Aromatic, and Crystal malts to give this beer a strong backbone, naked oats boost mouthfeel, and Carafa I gives it its dark color. The malty sweetness was offset by a controlled souring of the mash with a strain of lactobacillus, and small additions of East Kent Goldings hops give just a touch of bitterness.
