This rye Belgian dark ale is an example of balance. There is an interplay going on between the yeasts, malts, and hops that result in a very pleasant pint. We started with a good bit of rye malt and added some sweeter honey malt, a little brown malt, and a bit of toasty chocolate malt. This great grain bill is bolstered by some crisp but not imposing English hop additions. Finally, the fermentation was performed by a Belgian yeast strain that leaves bready, spicy, and complex yeast flavors.
